Muffin with a twist : Veggie Muffin

The moment you utter Muffins usually small version of cake or rather “mini cake” appears in our mind .A nice, mess free ,dessert with moderate sugar minus those thick layered sugary icing on them.

I often make nuts ,egg ,carrot and Banana cake for my twin toddlers but then I did not want them to have too much or too often for obvious reasons for having sugar in it.

My Son is yet to learn table manners and his liking was salty snacks.This was the reason I always wanted a mess free snack that he could eat all by himself.

“Necessity is the mother of invention” and that’s how “Veggie Muffins” came to existence . A big hit among my toddlers who relished it and finished their plates with no mess .

So thought of sharing this beautiful recipe with all mommies out there whose kids are reluctant to have veggies, moreover it works as a great tummy filler & healthy snack as such.

RECIPE FOR VEGGIE MUFFIN

Baking time: :18mins

Servings: 12 muffins

Cuisine : Snacks

Ingredients

1 cup = 250 ml

  • All purpose flour – 2 cups
  • Grated Zucchini- 1 cup
  • Grated Carrot – 1 cup
  • Frozen peas – 1/4 cup
  • Frozen sweet corn – 1/4 cup
  • Mozzarella cheese -3/4 cup
  • Milk – 1/2 cup
  • Yogurt 1/4 cup
  • Olive oil or neutral flavored oil – 1/2 cup
  • Baking powder – 3 tsp
  • Salt as per taste

You can add the following ingredients also .

Optional Ingredients

  • Capsicum or bell pepper
  • Spinach
  • Dried tomatoes or cherry tomatoes
  • Chopped onions
  • Chopped mushrooms
  • 2 eggs

In case you add eggs then reduce oil and milk to 1/4 cup .

You can add veggies as per your or your kid’s choice.

Step by step process for Veggies Muffins

1. Preheat oven at 180°C .

2.Grate zucchini and carrot in a big bowl squeeze the water from veggies with a muslin cloth.Don’t throw the water you can add later if you find the batter very thick.

3.Add other veggies to the bowl , then add the grated cheese and all wet ingredients like milk , yogurt, oil .

4.Sieve the flour along with the baking powder and salt .Sieving always helps in making your bakery products fluffy .

5.Finally add the flour to the bowl and mix the ingredients by spatula.Use cut and fold method to mix.

6.You can add the water drained from veggies if you find the batter very thick.

7.Grease the muffin tray with oil or butter and put the batter in it.All set to enter the preheated oven.

8.Bake the tray for 18 mins at 180°C .Check it with a skewer or knife .Your Muffins are ready if it comes out clean. If you want that golden brown colour for your muffins bake it for more couple of mins at 200°C.

Tips

  • Grease your muffin trays properly by neutral flavored oil or butter
  • If you want your muffins little more golden then bake it for couple of mins at 200°C.
  • If you want more healthier version of muffins you can add half atta (wheat flour) and half maida (refined flour)like 1 cup each.
  • Veggies can be used as per your or your kid’s taste .
